Grilled Grape Pizza


· 1 Onion, caramelized

· 1 Bunch Grapes, grilled and removed from stem

· 2-3 Slices Prosciutto, torn

· 4 oz. Goat Cheese, crumbled

· 1/2 Cup Mozzarella, shredded

· ¼ Cup Fresh Basil, sliced into ribbons


Grill first side of pizza, flip over and top grilled side with onions, grapes, prosciutto, and cheeses. Place pizza back on grill and finish cooking second side. Remove from heat and top with basil.

Grilled Pizza Crust Recipe


· 2 ¼ tsp. Yeast

· 1 1/3 Cup Water, very warm to the touch

· 3 ½ to 3 ¾ Cups Flour

· 2 Tbsp. Olive Oil

· 1 Tbsp. Sugar

· 1 Tbsp. Salt

· Cornmeal for rolling


1. Dissolve yeast in 110 degree water until frothy (about 5 minutes). Combine remaining ingredients with yeast mixture in a mixer, knead with dough hook for 10 minutes. Let rise in covered bowl sprayed with cooking spray until doubled in size in warm area.

2. Punch dough down, and roll out on a pizza peel dusted with cornmeal. Flip the dough onto a well-oiled grill, grill until crisp. Remove from grill, flip over to grilled side, and top with toppings
