Moroccan Style Pork Chop with Fresh Herb Roasted Fingerling Potatoes and Blanched Broccolini

Combine all the ingredients in a bowl, creating a marinade.

Bone-in Pork Chops

Place the pork chops in a zip-lock bag, add the marinade. Place them in the fridge on the bottom shelf for at least 6hr. For better results let marinating overnight, up to 2 days.

Fingerling Potatoes

1 lbs.

Cut them in half. Pre-heat oven at 350 F.

Fresh Italian Parsley

Place the potatoes in a mixing bowl. Add olive oil, chopped parsley, chopped rosemary and salt & pepper. Mix all together, place them in a sheet pan and put them inside the oven. Baked at 340 F. for 15 min.

Marinated Pork Chops

Remove pork chops from zip-lock bag, discard bag. Place them in a plate and let them set outside for 5 min. In the meantime pre-heat fry pan (grill will be the best option if available) at med-hi temp. Add 2 Tbs. of oil in the pan and let it get hot. When you start seeing white smoke place the pork chops on the pan, lower the temp to med. sear for about 4 min each side. Then place them in a sheet pan and put them in the over under the potatoes. At this point potatoes should be half way through. Raise oven temperature to 365 F. and cook the pork chops for about 10 min.

Remove potatoes form the oven, they should look golden brown and kind of shrunk. With a food thermometer check the pork chops, we are looking for 160 F. internal temp. Once they are done remove them and let them rest for 8 min. at room temp.

Broccolini

1 bunch

In the sauce pan boil water with a pinch of salt. Add Broccolini in boiling water and blanch them for 1 min. immediately remove form water and place them on serving plate.

Serve pork chops, roasted potatoes and blanched Broccolini. Pour the remaining juices from the chops over the entire dish.
