Super Spinach Shrimp Soup

Serves 4


2 cups shrimp, peeled and roughly chopped

2 teaspoons ginger, grated

2 garlic cloves, peeled and minced

½ teaspoon red pepper flakes

6 cups low sodium vegetable or fish stock

1 tablespoon fish sauce (nam pla)

½ cup low sodium soy sauce

1x 5oz bag Dole Organic Super Spinach from your local Food lion

8oz wide rice noodles (follow instructions on packet)


1. Take a medium size saucepan and add the add the shrimp, ginger, garlic, red pepper flakes, fish sauce and stock, bring to a boil then turn down to a simmer and cook for 3 to 4 minutes, stirring every now and again.

2. Add the spinach and noodles, cook for 2 minutes to warm through the noodles and wilt the spinach, serve (top with chopped green onions or roasted peanuts).
