Apple Pie Bars
Makes 12 small bars
Crust and Topping
1 cup (4oz) old fashioned oats
1 cup (4oz) whole wheat flour or oats for gluten free
1 1/2 cups (6oz) walnut pieces
1/3 cup (2 1/2 oz) extra virgin coconut oil
1/3 cup (2 1/2 oz) organic coconut sugar
2 tsp ground cinnamon
2 tbsp vanilla bean paste
3-4 crisp (gala,honeycrisp,fuji) organic apples
1 tbsp extra virgin coconut oil
1 tsp ground cinnamon
3/4 cup (3oz) raisins
Crust and topping: Combine all ingredients in a blender or food processor and process until clumps form. Press half the mixture out into a 9x11 inch pan and reserve the other half for the topping. Bake at 350F for about 15-20 minutes until lightly browned. Set aside.
Filling: Core the apples and slice thinly with skins on. Cook the apples slices with the coconut oil in a covered saucepan until softened. Stir in raisins and cinnamon.
To assemble: Spoon apple mixture over the baked crust and sprinkle the rest of the reserved topping over and bake at 350F for 25-30 minutes until topping is lightly brown. Serve warm or room temperature.
