Apple Yogurt Cake
 
Makes 10 servings
 
Ingredients
 
All-Purpose Flour                               1 1/3 cups
Ground Cinnamon                              1/4 teaspoon
Salt                                                  1/4 teaspoon
Sugar                                                1/2 cup
Unsalted Butter, melted                       8oz
Eggs                                                  2 each
Plain Yogurt                                       1/2 cup
Green Apples, peeled, sliced                2 each
Lemon Zest                                        1 each
Sugar, for topping                                1/3 cup
 
 
Method of Preparation
 
1.    Gather all ingredients and equipment
2.    Preheat the oven to 350 degrees
3.    In a small bowl, mix together the flour, cinnamon and salt
4.    In a seperate bowl, beat sugar and melted butter with a hand mixer until light and airy
5.    Add the eggs one at a time, beating for a few minutes after each addition
6.    Reduce the speed on the mixer and add a third of the flour mixture, mix that in, and then mix in half of the yogurt
7.    Repeat until the ingredients have been mixed together
8.    At this point, stir in the apples and the lemon zest
9.    Pour the batter into a buttered baking dish
10.    Smooth it out with a spatula
11.    Sprinkle the 1/3 cup sugar on top
12.    Bake for about 40 minutes, until the top is golden brown and a toothpick poked into the center comes out clean
13.    Place on a cooling rack and let cool
