The Thoughtful Baker’s Gluten Free Blue Cheese and Caramelized Bacon Bites
12 ounces Ricotta cheese (can use reduced fat)
3-4 ounces softened gluten free blue cheese ( here are a few as listed on their websites but always read labels since manufactures can change ingredients: Rosenborg, BelGioioso, Pointreyes, Trader Joe’s)
2-3 Tablespoons thinly sliced green onion tops
Fresh ground pepper
10 slices bacon
Belgian endive, washed, dried and separated into spears
Combine ricotta, blue cheese, fresh pepper, (salt if needed), and green onion tops. Make sure the blue cheese is soft so it mashes into the ricotta. Make 2-3 hours ahead or the day before.
Preheat oven: 400º- you can make the bacon a couple of hours ahead.
Bacon: Line a cookie sheet or jellyroll pan with foil and place a cooling rack on top. Lay out bacon on rack. Bake 13 minutes, turn over pieces and bake 2 more minutes. Remove pan from oven, blot bacon, and sprinkle with brown sugar and fresh ground pepper over bacon, lightly pat down sugar.
Return to oven and bake 9 more minutes. Watch carefully because cooking time will vary with thickness of bacon. Let cool and break into 1 inch pieces.
Pipe or spoon cheese mixture onto end of endive leaves. You can use 2 teaspoons or so. Place bacon straight up (not flat) onto cheese like a sail. Serve on a round platter with endive leaves placed in a circular pattern.
If you don’t want to use the endive, you could pipe the cheese onto gluten free crackers and top with the bacon.
