Butternut Squash, Spinach and Wild Mushroom Stuffed Crepes

Ingredients:
•    1# Butternut Squash        Peeled and Cubed
•    1 # Fresh Spinach            Washed and Stemmed 
•    1# Wild Mushrooms        Stemmed and Sliced   
•    4 oz Goat Cheese
•    4 oz Yellow Onion        Fine diced
•    2 Cloves Garlic            Fine Diced

Instructions:
1.    Sautee the Butternut squash until it starts to brown.
2.    Add Onions and Garlic and cook 1 min.
3.    Add Mushrooms and Spinach.
4.    Fill Crepes with vegetable mixture and dollop with goat cheese
5.    Roll crepes and serve.
