Chicken Divan

Serves 6-8

Ingredients

Frozen Broccoli thawed,chopped    2 packages (10oz)
Cooked Chicken, shredded    6 cups
Condensed Cream of Mushroom Soup   2 can (10 3/4oz)
Mayonnaise      1 cup
Sour Cream      1 cup
Sharp Cheddar Cheese, grated    1 cup
Fresh Lemon Juice     1 tablespoon
Curry Powder      1 teaspoon
Salt & Pepper       To Taste
Dry White Wine      1/2 cup
Fresh Parmesan Cheese, grated    1/2 cup
Soft Bread Crumbs     1/2 cup
Unsalted Butterm melted     2 tablepoons

Method of Preparation

1. Gather all ingredients and equipment
2. Pre-heat oven to 350 degrees
3. Drain the broccoli and put into a casserole dish
4. Add the shredded chicken
5. In a medium bowl, combine the soup, mayonnaise, sour cream, Cheddar cheese, lemon juice, curry powder, salt, pepper, and white wine
6. Whisk together to make a sauce
7. Pour over the broccoli and chicken
8. Mix well with a spatula
9. Place the mixture into a 11 x 7 inch casserole dish that have been sprayed with a vegetable oil cooking spray
10. Pat down evenly and smooth with a spatula
11. In a small bowl, combine the Parmesan Cheese, bread crumbs, and butter
12. Sprinkle over the chicken/broccoli mixture
13. Bake for about 30 to 45 minutes until bubbly and golden brown
