Chickpea Chicken Curry (The Dinner that helps you Burn Fat!)
1 T olive oil (My Essentials)
1 chopped onion
1 T curry powder
2 cloves minced garlic
1 t minced ginger
1 seeded, diced jalapeno pepper
1 (14.5 oz) diced tomatoes (My Essentials)
1 (15oz) can chickpeas (drained and rinsed)
Breast meat from rotisserie chicken (shredded) Food Lion deli
Serve over My Essentials brown rice.

Directions:
Heat olive oil in sauté pan over medium heat. Add onion, curry powder, garlic, ginger, and jalapeno pepper. Cook till onion is translucent. Add tomatoes, chickpeas, and rotisserie chicken.  Simmer, stirring occasionally, 8 to 10 minutes, until fragrant. Makes 4 servings.
