Easy Peasy Parmesan Chicken
3 T. melted butter
2 c. Parmesan Cheese (freshly ground or in green can)
I package boneless chicken breasts, cut into 4-inch pieces
Salt, pepper and spices/herbs to taste.*
 
Preheat oven to 350 degrees.  Spray a shallow glass baking dish with Pam or other non-stick spray. Melt butter in a shallow bowl.  In a separate bowl, mix Parmesan cheese, salt, pepper and spices.  Pat chicken dry.  Dredge chicken pieces through butter and then through cheese mixture.  Nestle together in baking dish.   Pour remaining cheese mixture over top of chicken.   Bake for 30 minutes or so or until a meat thermometer reads 180 degrees.

•      Note regarding spices and herbs – be creative and use what you have on hand.  Fresh rosemary, ½ packet Good Seasonings dry salad dressing mix, onion salt are all examples.
