Fresh Apple Cinnamon Muffins

Makes 12 servings

Ingredients

All-Purpose Flour
1 1/2 cups
Sugar
1/3 cup
Baking Powder
2 teaspoons
Ground Cinnamon, divided
1 teaspoon
Salt
1/2 teaspoon
Egg
1 each
Milk
1/2 cup
Apple, peeled, cored, finely chopped
1 each
Unsalted butter, melted
4 tablespoons
Chopped Nuts (walnuts or pecans)
1/3 cup
Brown Sugar, packed
1/4 cup

Method of Preparation

1.    Gather all ingredients and equipment
2.    Preheat oven to 375 degrees
3.    Coat a 12-cup muffin tin with cooking spray
4.    In a large bowl, combine flour, sugar, baking powder, 1/2 teaspoon cinnamon, and salt
5.    In a medium bowl, beat together the egg and milk
6.    Stir in chopped apples and melted butter
7.    Add all at once to the flour mixture
8.    Stir just until mixed (batter will be very stiff)
9.    Spoon into prepared muffin tin, filling each cup about two-thirds full
10.    In a small bowl, mix chopped nuts, brown sugar, and remaining cinnamon to make a topping
11.    Sprinkle the topping evenly over the muffins
12.    Bake 15 to 20 minutes
13.    Remove from pan immediately and serve warm
