Garlic Shrimp Bruschetta:
12 thin slices French bread
3 Tablespoons Olive oil
1/2 Cup diced plum tomatoes
1/2 teaspoon minced garlic
Pinch each Kosher salt and Black pepper
1/2 pound medium shrimp (peeled and deveined, tails off)
1/4 cup pesto
Fresh basil leaves for garnish
1.Heat broiler. Place bread on baking sheet; Brush with olive oil. Broil 2 to 3 minutes, turning once, until lightly toasted.
2.Place tomatoes, 1 tablespoon of the oil, 1⁄2 teaspoon of the garlic, and the salt and pepper to taste in a bowl. Toss to coat.
3.Heat remaining 2 tablespoons oil in a large nonstick skillet. Add shrimp and remaining garlic. Sauté 2 minutes or just until shrimp are cooked through. Remove from heat.
4.To assemble, spread each piece of toasted bread with pesto. Top with about 1⁄2 tablespoon tomato mixture, then top with shrimp.
5. Garnish with fresh basil leaves
