Macadamia Mahi Mahi (GF, DF)
Fish is a staple in our home. It is one of the easiest and fastest meals to make, packed full of lean protein and nutrients your body craves. Try this recipe during the week when you only have 15 -20 minutes to prepare dinner.  You will love it!

Health Tip:  Always make sure to buy WILD caught fish.  Flash frozen wild caught fish is fine to use, too.

Ingredients:

4 Wild Caught Mahi Mahi fillets
1 cup of Macadamia nuts, chopped (We use a hand held chopper that my 5 year old, Riley, loves to help with.)
1 cup of coconut milk
1/4 tsp. of sea salt
1/4 tsp. of pepper
Coconut oil to coat baking dish
 
Directions:  Preheat oven to 350o.  Lightly coat a 13 X 9 baking dish with coconut oil.  Sprinkle the fish with the salt and pepper.  Pour the chopped macadamia nuts in one bowl and the coconut milk in another bowl.  Dip one side of the fish in the milk, then dip it in the nuts and place it in the baking dish.  Complete these steps for all 4 Mahi Mahi filets.  Bake the fish for 20 minutes and serve.



Cauliflower Fried Rice (GF, NF, DF)
Really? Could it get much better than this?  Fried Rice that is made from Cauliflower! Yes, it’s true!!  Cauliflower’s health benefits are plentiful.  It is in the same family as broccoli, kale, cabbage and collards, and it provides many cardiovascular benefits.  Cauliflower also aids in digestion and has detoxifying qualities.  Enjoy this healthy alternative to everyday fried rice.

Health Tip:  Because coconut oil has a high smoke point, it does not lose vital nutrients when cooking at a high temperature.

Ingredients:

1 head of organic cauliflower, stem removed

For Ingredient Mixture:
1/2 red or yellow onion, minced
3 garlic cloves, minced
2 tbsp. fresh basil, diced
1 egg
2 tbsp. coconut flour
1 tsp. of sea salt
Black pepper to taste  

Directions:  Steam the cauliflower and put in a bowl.  Using a potato masher, mash the cauliflower down to the consistency of rice.  In a large mixing bowl, add all of the Ingredient Mixture.  Combine the two bowls and mix.  Heat 3 - 4 tbsp. of coconut oil in a skillet over medium heat.  Then, pour the mixture into the skillet.  Fry the cauliflower mixture for 7 - 10 minutes, and it will be good to go!


Stress-Free Pecan Pie (Gluten Free, Dairy Free)

½ cup Organic Dark Brown Sugar
½ cup organic brown rice syrup
2 tbsp coconut oil, melted
2 large, free-range eggs
1 tsp vanilla extract
¼ tsp sea salt
1 ½ cups raw pecans

Unbaked gluten-free pie crust Preheat oven to 350F. Line a pie dish with the pie crust or use the already formed crust without a pan. Mix all of the ingredients in a bowl until well combined.
