Meatloaf Recipe Re-Do
Changing just a few key ingredients changes a classic meatloaf recipe from heavy to healthy!

1 cup shredded carrots
½ cup minced shallots
2 cloves garlic
1 tbs EVOO (extra virgin olive oil)
1 # ground chicken
1# ground breast meat
2 tbs porcini powder (see recipe below)
2 tsp beef bouillon powder
2 tbs Dijon
1 tbs tomato paste
½ cup cooked quinoa
4 drops liquid smoke
½ cup grated Parmesan cheese
½ tsp black pepper
1 tsp kosher salt
2 egg whites

1) Place carrots, shallot and garlic into a food processor and pulse until finely minced. Sauté this mixture in olive oil until soft—about 5 minutes over medium-high heat. Set aside to cool.

2) Preheat oven 375º. Once vegetable mixture is cooled, mix it and everything else together until uniform. Place into a greased loaf pan and cover with aluminum foil. Bake for one hour and allow to rest for 15 minutes before slicing. Serves 6

Porcini Powder:
Buy a small (½ oz) cellophane bag of dried porcini mushrooms (found in the produce department of most supermarkets). Using a clean coffee grinder (clean, as in, never been used to grind coffee) pulse/grind the dried mushrooms, in batches, until they are powder. Use as a terrific umami seasoning for beef, chicken, rice and pasta.
