Monroe Fire Department's Beef Enchiladas

Monroe Fire Department’s Beef Enchiladas

1 1/4 pounds ground beef
8 oz. cream cheese
16-20 oz. medium Pace Picante salsa
4 burrito size or large tortillas
4 oz. shredded Mexican 4 cheese blend cheese


1. Begin by browning beef
2. Mix in cream cheese and 1/2 cup of salsa
3. After cream cheese has melted and mixed with beef fill tortillas with beef mix 4. Coat the bottom of pan with salsa to prevent enchiladas from sticking
5. Roll tortillas and place folded side down in pan
6. Cover enchiladas with shredded cheese
7. Dribble salsa over top of enchiladas
8. Place enchiladas in the oven for 10 min @ 350 degrees
9. Remove from oven and serve
