Pollo alla Contadina
½ Cup EVOO
4 ea Split Bone-In Chicken Breasts
4 Links Sweet Italian Sausage, raw, cut into thirds
2 Medium Baking Potatoes, peeled and cut into wedges
1 Medium Yellow Onion, sliced thin
6 Garlic Cloves
1 Rosemary Sprig, finely chopped
4-5 Thyme Sprigs, finely chopped
4-5 Sage Leaves, finely chopped
1 Cup Dry White Wine
1 Cup Chicken Stock, low sodium
1 Small Package of Frozen Peas *
T.T. Salt & Pepper
Preheat oven to 375
In a large bowl, combine herbs, garlic and olive oil to make a paste
Add chicken breasts, sausage, potatoes and onions and toss to coat
Place in a large roasting pan. Season well with salt and pepper.
Cook uncovered for 30 minutes. Add peas, chicken stock and white wine.
Continue to cook for 15-20 minutes or until chicken is an internal temp of 165 degrees.
