Green Chili Fried Chicken tenderloins
2 lbs chicken tenderloins
1 8oz carton of dairy sour cream
1 4oz can diced green Chile peppers
2 T snipped fresh cilantro
2 T lime juice
1 clove garlic, minced
¾ t ground cumin
½ t salt
1/4t black pepper
¾ cup all-purpose flour
Bottled hot pepper sauce
Lime Wedges (optional)
In bowl combine sour cream, milk, Chile peppers, cilantro, lime juice, cumin, salt, and black pepper. Place chicken pieces in bag and set in shallow dish. Pour sour cream mixture over chicken; seal bag. Refrigerate at least 4 hours or overnight; turn bag occasionally.
Place flour in a shallow dish. Remove chicken from sour cream mixture. Discard remaining sour cream mixture. Add chicken pieces to flour, a few at a time, turning to coat.
Add oil to 12-inch heavy skillet to depth of ¼ to ½ inch. Heat over medium-high heat until hot (350 degree F). Reduce heat. Carefully add chicken to the skillet. Cook uncovered, over medium high heat 6-8 minutes or until desired doneness turning occasionally brown evenly. Drain on paper towels. If desired, serve with bottled hot pepper sauce and lime wedges.

1lb. ground beef “Food Lion Brand”
1 Pkg. taco seasoning mix
½ cup chunky salsa
1 cup shredded Mexican cheese
Sour Cream (optional)
Sliced pitted ripe olives (optional)
Heat the oven to 400 degrees F. Press wonton wrappers into 24 (1 ½ inch) mini muffin-pan cups.
Cook the beef in a 10-inch skillet over medium-high heat until it’s well browned, stirring often to break up the meat. Pour off any fat. Stir in the taco seasoning mix and salsa. Spoon the beef mixture into the wonton cups. Top with cheese and more salsa if desired. Bake for 4 minutes or until wontons are golden brown and the cheese is melted. Garnish with sour cream and olives.
