Seared Sea Scallops with a Lemon Aioli

Serves: 4

Ingredients

Olive Oil        2 tablespoons
Sea Scallops       1 pound
Kosher Salt       To taste
Fresh Ground Black Pepper    To taste
Mayonnaise       1 cup
Lemon Juice and Lemon Zest    ½ each  Parsley        Garnish


Method of Preparation

1. Gather all ingredients and equipment
2. Clean the scallops and season with salt and pepper
3. Set a large sauté pan over high heat and add olive oil
4. Once heated, add scallops and cook undistributed for 2 to 3 minutes on each side until browned
5. While the Scallops are sautéing, stir lemon zest and juice into mayonnaise
6. Garnish with fresh parsley and serve
