Sweet Tea's shrimp&grits recipe

Sautéed shrimp
8 tiger shrimp
1/4 cup of diced red and green peppers
1 pat of butter
Pinch of smoked paprika
Pinch of kosher salt
1/2 tbl spoon of bacon per cooked

Place skillet on high heat and add butter and peppers
Sautéed until peppers are tender about 1 minute
Add shrimp, pinch of smoked paprika, pinch of kosher salt and bacon
Sautee for a couple of minutes until shrimp are nice orange color and firm.
Remove from heat and pour on top of grits
Top with cheese and parsley

Grits recipe
4 Qts chicken stock
2 lbs stone ground grits
 1 lb butter
1 qt heavy cream
1 lb sharp cheddar
1 lb cream cheese
1 tb kosher salt
1/2 tab black pepper

Add chicken stock to 8 qt heavy bottom pan and place on medium heat.
Add butter, salt, and pepper whisk all together let sit on medium heat for about 10 minutes, do not boil
Add grits and whisk for about 2 minutes
Add heavy cream and continue to whisk
Once the cream has absorbed add all cheese and whisk until smooth, about 5 minutes at low simmer.
Remove from heat and serve
Makes about 10 servings
