Three Cheese Popovers

Servings: 6-8

4 eggs
2 cups my essentials whole milk
2 cups my essentials flour, sifted
1 tablespoon my essentials salt
3 tablespoons my essentials butter, melted
1/4 cup my essentials sharp (or mild) cheddar cheese, shredded
1/4 cup my essentials mozzarella cheese, shredded
1/4 cup my essentials Colby Jack cheese, shredded


Directions
Preheat oven to 400°F. Place popover pan in oven to get it really hot.  You will pour the batter in to the popover pan only a minute after you take it out of the hot oven.  Generously butter 6 cups in a popover pan (a muffin pan will work as well).  Heat milk to 130 degrees on stove or in microwave.  Do not bring it to a boil. In a large bowl, beat eggs well with mixer. Make sure they are room temperature. At low speed add milk.  Add flour and salt and beat until smooth. Stir in melted butter.  Fill cups ½ to 2/3 full with batter.  Top with cheese.  Bake 35-40 minutes or until puffed and deep golden brown.  Let pans cool 1 minute and then loosen with a knife.  Serve hot with butter and fresh fruit.
