Cooking spray (like Pam)
1 & 1/2 pounds lean, ground turkey
1 tablespoon minced, fresh ginger
1 jalapeno, seeds and membranes discarded, flesh minced


Dressing:
2 tablespoons lime juice
1 tbs brown sugar
2 tbs fish sauce
1/4 cup chopped, fresh cilantro
1/4 cup chopped, fresh mint
4 green onions, chopped

Handful of chopped, dry roasted peanuts
Salt to taste

12 Napa cabbage leaves or butter leaf lettuce leaves

Cook the turkey in a large sauté pan over medium heat, until no longer pink, about 8 minutes. During the last minute of cooking, add in the ginger and jalapeno-- stirring into the meat. Make the dressing: Shake together lime juice, brown sugar and fish sauce until sugar is dissolved. Pour over cooked turkey and toss in fresh herbs. Finish with peanuts, then pile into cabbage or lettuce cups.
