Waldorf Salad

Makes 6 servings

Ingredients

Mayonnaise                            1/4 cup
Apple Cider Vinegar              1 tablespoon
Buttermilk                                1/3 cup
Blue Cheese, crumbled        1/2 cup
Yellow Onion, grated              1/4 cup
Salt                                             1/4 teaspoon
Fresh Black Pepper                1/8 teaspoon
Cayenne Pepper                      Pinch
Sweet Red Apple (Gala), diced                    2 cups
Red Seedless Grapes, halved                    1/2 cup
Celery, thinly sliced                                         1 cup
Walnuts Pieces, broken                                1/2 cup
Bibb Lettuce                                                     1 head

Method of Preparation

1.    Gather all ingredients and equipment
2.    In a bowl, whisk together the mayonnaise and vinegar
3.    Slowly add buttermilk, whisking to thicken
4.    Add the blue cheese, onion, salt, black pepper and cayenne and whisk well to combine; set aside
5.    In a large bowl, combine apples, celery, grapes and walnuts
6.    Add dressing to taste
7.    Arrange the lettuce leaves on 6 salad plates
8.    Top with tossed salad and serve
