Aurora's Chicken Pepperoni
4 boneless skinless chicken breasts, pounded thin
1/2 cup freshly grated parmesan
salt and pepper
2-3 ounces pepperoni slices (regular or turkey pepperoni)
2 cups red sauce, homemade or your favorite jarred
1 & 1/2 cup shredded mozzarella
Preheat the oven to 375. Spray a large baking dish with nonstick spray and set aside.
Season each chicken breast with salt and pepper, then lay them, top side down on a clean plate. Sprinkle Parmesan evenly over chicken breasts, then arrange pepperoni in one layer. Roll chicken breast up and secure with toothpicks.
Place chicken rolls into a greased baking dish. Pour red sauce over and cover dish with foil. Bake for about 25 minutes, then remove foil and layer on mozzarella. Continue baking for 10-15 minutes longer, until the cheese is gooey and starting to turn golden.
Allow to cool for 5 minutes before serving.
