Bananas Foster
 
Serves: 8   
 

Ingredients
 
Butter, unsalted                                8 tablespoons
Dark Brown Sugar, packed                        1 cup
Cinnamon Stick                                         1 each
Lemon Zest, strip 1” by 1 ½ “                          2 each
Large Banana, firm, peeled, halved              4 each
       Lengthwise, and then halved                   
       crosswise                                                   
Dark Rum                                        ½ cup
Vanilla Ice Cream                               1 pint
 
Method of Preparation
 
1.  Gather all ingredients and equipment
2.  Melt the butter in a heavy-bottomed 12-inch skillet over medium heat
3.  Add brown sugar, cinnamon stick, and lemon zest
4.  Stir to dissolve the sugar, about 1 minute (if the heat is too high, the butter and sugar will separate instead of combining to form a sauce)
5.  Add the bananas and spoon some of the sauce over each piece
6.  Cook until the bananas are glossy and golden on the bottom, about 1 ½ minutes
7.  Turn the bananas and continue cooking until very soft but not mushy or falling apart, about 1 ½ minute longer
8.  Remove the skillet for the heat
9.  Add the rum and wait until the rum has warmed slightly, about 5 seconds
10. Wave a match over the pan until the rum ignites, shaking the pan to distribute the flame over the entire pan
11. When the flame subside (this will take about 15 to 30 seconds), divide the bananas and sauce among the four bowls of ice cream, discarding the cinnamon stick and lemon zest
12. Serve immediately
