Barbara D’Ambrosio, owner of The Thoughtful Baker, LLC a gluten free bakery located in the Ballantyne area, custom bakes for allergen sensitive individuals. The Thoughtful Baker specializes in preservative and additive free baked goods that can be prepared without dairy, eggs, gluten, peanuts, soy, or tree nuts. Each custom baked-to-order treat has the delicious taste and texture typical of conventional baked goods even without these traditional ingredients. Barbara has teamed up with Earth Fare Ballantyne to offer a free Gluten Free Cooking Class on the fourth Monday of the month. Her classes are focused on easy meal ideas that are family friendly and quick to prepare. She was featured in the September 2009 issue of South Park Magazine and works with registered dietitians, autism groups, and Celiac groups in the area. Barbara also participated as a guest chef at the Chio Italia Festival in Uptown Charlotte at the Wachovia Center. The Thoughtful Baker’s gluten free hamburger buns and cookies are offered by the Big Daddy’s restaurant group on their gluten free menu.
