CRAZY CHOCOLATE CAKE
2 cups flour
1-cup sugar or Splenda
¼ cup unsweetened cocoa powder
1 ½ tsp. baking soda
1 ½ tsp. baking powder
1-cup coffee
1-cup mayonnaise (can use light-but not fat free)
2 tsp. good quality vanilla
Mix all dry ingredients; then add ingredients. Blend well. Pour into greased and floured 9 x 13 inch pan or Bundt pan. Bake at 350 degrees for 30 to 40 minutes.
CHOCOLATE GANACHE
½ cup good quality chocolate or chips (60 % cocoa)
½ cup heavy cream
Melt in microwave in one-minute increments (stirring after each minute) just until smooth and shimmery. Pour over warm cake!
