The Thoughtful Baker’s Gluten Free Caramelized Onions and Apple Sauté with Bacon Crumbles
Caramelized Onions: You can make this ahead if you like and refrigerate or freeze.
3 large sweet onions, thinly sliced (six cups sliced)
1 tsp. olive oil
1/8 tsp. salt
Balsamic vinegar (this is a gluten free vinegar)
Melt butter over medium heat, add onions and sprinkle with salt. Cook stirring constantly for 10 minutes. Reduce heat to low and continue cooking another 45 minutes, stirring occasionally, until onions are brown and soft. As they cook down, if the pan becomes dry add a couple of tablespoons of water as need. Just before they are finished, add a splash of good quality balsamic vinegar and cook another 2 minutes. Remove from heat.
(Most recipes call for a lot more fat but I like to do these in a more healthy style. Keep your eye on the onions and make sure they do not dry out or they will burn. This will make about 1 1/2 cups caramelized onion, which is more than you need, so reserve or freeze the extra onions.)
Bacon: 4-5 slices regular or turkey bacon
Brown until crisp. Drain on paper towel and crumble.
2 Tbl butter or reserved bacon fat (depending on how large your apples are you may need more or less fat)
3 firm apples like Granny Smith or Fuji-peeled and sliced
Dry sherry (this is a gluten free alcohol)
Melt butter or bacon fat with a sprig of fresh rosemary. Add sliced apples and sauté until tender but NOT mushy- around 5-7 minutes. (Check the flavor of the apples part way through to decide how strong a rosemary flavor you like- remove sprig as desired). When apples are almost cooked, add a splash of sherry, a turn of fresh ground pepper, and cook 1 minute more. Remove rosemary if you have not already. Add reserved bacon to mixture.
Assemble: Taste and season with salt and pepper as needed. Top with dollops of warm caramelized onions. Serve portions with the caramelized onion as a side dish to chicken or pork. You can turn this into a really decadent dish by topping cheddar cheese grits with the onion-apple- bacon mixture.
