Flat Iron Steak
Minced Garlic
Extra Virgin Olive Oil
Kosher Salt
Black Pepper

Marinate the steak 2-3 hours if time allows. Move steak to preheated grill and cook 7-10 minutes on both sides. Remove from grill and cover. Let rest 10 minutes. Cut against the grain and enjoy!
Smashed Potatoes
Small red potatoes of similar size, allow 2 per person
Extra Virgin Olive Oil
Kosher Salt
Fresh Thyme

Boil potatoes in salted water for about 30 minutes or until fork tender. Drain and place on a well oiled baking sheet. Gently smash potatoes and drizzle with more EVOO. Sprinkle with kosher salt and fresh thyme. Bake at 425 for 20 minutes.
