Delicious Salmon Packets
The combination of savory, Dale's seasoning, spicy Dijon mustard and sweet honey make a delicious glaze for the salmon and veggies. This is an easy way to make dinner seem gourmet.

This recipe is per packet (each packet serving one)

1, 24" sheet foil
non-stick spray
1 small carrot, julienned
1/2 small leek, julienned
1/2 celery stalk, julienned
1 tablespoons ginger root, peeled and minced
1, 6oz. salmon steak
1 teaspoon Dale's
1 teaspoon Dijon mustard
1 teaspoon Honey
3 thin slices lemon

1) Pre-heat oven 375º. Spray one side of the foil with non-stick spray. Make sure the carrots, leeks and celery are the same size and pile them on the middle of the side of the foil sprayed with non-stick spray; scatter the ginger over top. Sprinkle sparingly with sea salt then lay the salmon steak on top of the vegetables. Whisk Dale's, Dijon and honey together and drizzle over the fish, and lay the lemon slices on top of the fish.
 
2) Fold the foil over the fish to make a packet and seal up all three sides by folding two times over. Place in a pre-heated oven and bake (25 minutes if convection, 35 minutes if traditional oven).
 
Serve immediately. Be careful when opening the foil packet, as steam will billow out.

French Onion Chicken and Mushrooms
Make these packets in a snap at dinner time, or make them up in the morning and stash them in the fridge until ready to bake.
 
Per packet (each packet is one serving)
 
1, 24” long sheet foil
non-stick spray
4 ounces sliced crimini or button mushrooms
2 tablespoons chopped shallots
1 teaspoon Wondra flour
Sea or kosher salt
1 boneless, skinless chicken breast
1 teaspoon Dale’s seasoning
1 pat butter
 
Spray one side of the foil with non-stick spray. Toss the mushrooms and shallots with Wondra and pile on the middle of the side of the foil sprayed with non-stick spray. Sprinkle sparingly with sea salt, then lay the chicken on top of the mushrooms/shallots. Drizzle Dale’s over the chicken and top with a pat of butter.
 
Fold the foil over the chicken to make a packet and seal up all three sides by folding two times over. Place in a pre-heated oven and bake (25 minutes if convection, 35 minutes if traditional oven). The Dales mixes with the juice from the cooked mushrooms and chicken, to create a delicious, savory sauce that is thickened with Wondra and made silky by the butter.
 
Serve immediately. Be careful when opening the foil packet, as steam will billow out.
