Goji Berry Waffles

Ingredients:
¾ cup    Almond Flour
1
1/2
¼ cup
¼ cup
1 teaspoon
1 teaspoon
½ teaspoon
¼ teaspoon
1 tablespoon    Egg (or 2 tablespoons Flaxseeds + 1 tablespoon Water)
Banana
Goji Berries
Water
Vanilla Extract
Baking Powder
Baking Soda
Sea Salt
Coconut Oil (or Olive Oil Cooking Spray)
Directions:
Combine almond flour, egg, banana, water, goji berries, vanilla extract, baking powder, baking soda, and sea salt in a bowl and mix.
Heat waffle iron (or skillet if you do not have a waffle iron) and grease with either cooking spray or coconut oil.
Spoon batter onto waffle iron and cook for about 4 minutes or until golden brown.
Serve hot with a dash of organic maple syrup, coconut oil or butter (optional).

*This recipe does make enough for leftovers, so feel free to either cook all of them and place in refrigerator or only cook enough for yourself and place the rest of the batter in the refrigerator.
