Grilled Lamb Chops with Gorgonzola Butter

Grilled Baby Lamb Chops with Gorgonzola Butter:
 
 It's best to make the Gorgonzola Butter ahead of time. This can be done a few days in advance if needed.

 Gorgonzola Butter:
 1/2 cup (1 stick) unsalted butter, softened
 4 ounces Gorgonzola cheese, crumbled, at room temperature
 1/4 cup chopped scallions
 1/2 teaspoon ground black pepper
 1/2 teaspoon balsamic vinegar
 1/2 teaspoon Worcestershire sauce
 1 teaspoon chopped fresh parsley
 
1) Combine all ingredients in a large bowl until well blended. This is best done with a wooden spoon.
2) Lay a piece of plastic wrap on the countertop. Scrape the butter onto the plastic and, using the plastic wrap as a guide, form the butter into a log. Fold the ends closed and refrigerate until ready to use.

For Baby Lamb Chops
Prepare marinade:
 
2 tablespoon of fresh lemon juice
3 tablespoon olive oil
1 teaspoon Dijon mustard
1 teaspoon chopped garlic
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh thyme
Salt and pepper
 
 Marinate lamb chops at least 1 hour before grilling Grill lamb chops
 2-3 minutes on each side (best if cooked to medium or medium rare).
 Remove from grill and place a slice of Gorgonzola Butter on each chop and serve.
