White Bean Salad

Makes 4 servings

Ingredients

White Beans, cooked                        12 ounces
Tomato, cubed                            1 each
Hard-boiled egg, chopped                    1 each
Black olives, cut into 4 pieces                    4 each
Pimento                                1 each
Parsley, minced                            1 tablespoon
Olive Oil                            2 tablespoons
Balsamic Vinegar                        1 tablespoon
Garlic, mashed to paste                        1 clove
Salt                                To Taste

Method of Preparation

1.    Gather all ingredients and equipment
2.    In a bowl, combine gently the beans, tomato, egg, olives, pimento and parsley
3.    In a separate bowl, whisk the oil, vinegar, salt and garlic
4.    Fold into the bean mixture and marinate in the refrigerator for several hours
Shrimp in Green Mayonnaise

Serves 6

Ingredients

Water                                8 cups
Old Bay Seasoning                        2 tablespoons
Bay Leaves                            2 each
Large Shrimp, unshelled                        1 pound

Green Mayonnaise
Mayonnaise                            2/3 cup
Anchovies, finely chopped                    4 each
Parsley, minced                            2 tablespoons
Thyme                                1/4 teaspoon
Capers, minced                            1/2 teaspoon

Method of Preparation

1.    Gather all ingredients and equipment
2.    Place water in a large stock pot
3.    Add the Old Bay Seasoning
4.    Bring to a boil
5.    Add shrimp and cook for about 2 minutes, until just done---do not overcook; shell the cooked shrimp
6.    In a bowl, combine mayonnaise, anchovies, parsley, thyme, and capers
7.    Fold in the shrimp gently and marinate for several hours or overnight
Mojito Chicken
Makes 36 pieces

Ingredients

Olive Oil                        2 teaspoons
Onion, diced                        ½ cup
Garlic, minced                        2 cloves
Sugar                            1 tablespoon
Chicken Breast, skinless, boneless            1 pound
Fresh Lime Juice                    ½ cup
Rum Extract                        ½ cup
Fresh Lime zest                        1 teaspoon
Salt                            To taste
Pepper                            To taste
Fresh mint leaves, chop                    ¼ cup



   
Method of Preparation

1.    Gather all ingredients and equipment
2.    Heat olive oil in a large skillet over medium heat
3.    Add onion, garlic and sugar and cook for 3 minutes, until soft, stirring with a wooden spoon
4.    Add cut-up chicken and sauté 3 to 5 minutes, until golden brown on all sides
5.    Add lime juice and rum extract
6.    Salt and pepper and bring to simmer
7.    Simmer for 3 minutes, until chicken is cooked through
8.    Garnish with mint and serve immediately
