La'Wan's Soul Food Macaroni & Cheese

La’Wan’s Soul Food Restaurant - Macaroni & Cheese Recipe
- 1-16 oz pkg. of elbow noodles
- 3 ½ lbs- mild shredded cheddar cheese
- 2 -tsp. of kosher salt
- ½ tsp. of pepper
- 1 ½ qts of milk (regular or skim)
- 2 eggs
- 1 tsp of olive oil
Preheat oven to 350 degrees. Boil the macaroni in a 2 quart saucepan with 1 tsp of olive oil. Add elbow pasta noodles and cook only 8 to 10 minutes or until noodles are al dente. Drain off excess water. Mix 1 ½ quarts of milk and 2 eggs.
Apply pan coating to bottom of baking dish. Place cooked elbow pasta noodles in baking dish. Add 2 teaspoons of kosher salt and a ½ teaspoon and mix into noodles. Massage up to 2 or 3 pounds of mild cheddar shredded cheese into cooked noodles. Pour 1 ½ quarts of milk with 2 eggs (mixture) into baking dish. Do not allow noodles to exceed the top layer of noodles.Sprinkle remaining cheese over the top layer of noodles
Bake uncovered for approximately 40 minutes to 1 hour or until top layer of cheese is golden brown. Recipe serves 40-45 based on a 4oz serving.
