Lemon lavendar tarts
Makes 12
Crust
2 tbsp coconut sugar
1 cup (5oz) Macadamia nuts
¼ tsp lemon rind
1 tbsp coconut flour

Filling

1/2 cup (about 4 small lemons) lemon juice
½ tsp organic lemon rind
4 large eggs
2 tbsp coconut flour
1/2 cup organic confectioners’ sugar
2 tbsp of dried lavender

Icing


2 tbsp organic confectioners’ sugar
1 tbsp lemon juice
Dried lavender for garnish
Grind macadamia nuts in the blender until fine and clumping.  Add the sugar, flour, and rind and blend until combined.  Press into a glass 8x8 inch baking pan and bake at 350F for 8-10 minutes until just lightly browning.  Blend the filling ingredients together and pour over the crust.  Bake at 375F for 10 minutes just until set. Remove, cool, and drizzle with icing if desired and decorate with lavender. For the icing mix together sugar and lemon juice until smooth.
