Pan Seared Grouper with Crespelle alla Fiorentina
Ingredients:
• 2 6 oz grouper fillet
• 4 crespelle alla fiorentino (recipe to follow)
• 2 blanched romanesco cauliflower
• 2 tb whole unsalted butter
• 2 tb olive oil
• Salt and pepper

Preheat sauté pan and add olive oil. Season grouper with salt and pepper, place in sauté pan and brown on one side for approximately 3 minutes, flip with a spatula and place in a 400 degree oven with the crespelle and the romanesco. Heat for 5 minutes or until grouper is cooked through and crespelle are hot. Remove the grouper from the pan and place the pan back on the stove top, add the butter and cook until it starts to brown and get a nutty aroma. Immediately squeeze the lemon into the butter.

To Serve:
Place the crespelle in the center of a dinner plate. Lay the grouper over the top and place the romanesco to the side drizzle all with the brown butter.

Crespelle alla Fiorentina
Ingredients:
• 4 crepes
• 1 cup ricotta cheese
• ½ cup cooked drained spinach
• 2 tb. Grated parmesan
• Salt and pepper
Combine the cheeses and the spinach and season to taste. Divide the filling evenly among the crepes and roll up.
