Roasted Beet Salad  (4 servings)

Ingredients:
- 6 red beets
- 2 avocados
- 2 cups arugula
- 2 cups balsamic vinegar
- 1 cup + ½ cup extra virgin olive oil
- 3 TBSP salt
- 2 tsp  black pepper
Method:
- Toss the beets with 1TBSP salt and ½ cup olive oil, place in a foil package, roast in 350 oven for 1 hour
- In a separate bowl whisk the olive oil, balsamic, salt, and pepper together
- Peel beets and cut into a medium sized dice, then toss the diced beets in the balsamic marinade, and let cool.
- Peel and pit the avocado, dice into large chunks
- Place the marinated beets in four bowls, put half an avocado into each of the bowls,  toss arugula with a TBSP of the beet marinade, place the arugula on top of each bowl
