Salmon Carpaccio with Campari Dressing

Yield: 4 servings
Ingredients:
1 Tablespoon        Olive oil
¼ cup            Salted capers, rinsed & dried
8 oz            Sashimi salmon   
2 oz            Baby rocket
¼ cup            Campari
¼ cup            Lemon juice
¼ cup            Olive oil (extra)
1 ½ teaspoons        Sugar
            Sea salt


Method of Preparation

1.    Heat a frying pan over medium-high heat. Add the oil and capers and cook for 2 minutes, or until crisp. Set aside.

2.    With a sharp knife, thinly slice the salmon and place on a serving plates. Top with capers and rocket.


3.    Mix together the Campari, lemon juice, oil, sugar and salt. Drizzle over the salmon.
