SESAME SEARED TOFU ON GRILLED VEGETABLES WITH WASABI YOGURT AND SWEET SOY GLAZE
For Tofu:
10 ounces extra firm Tofu cut into 1/2" thick slices
1/8 Cup White Sesame Seeds
1/8 Cup Black Sesame Seeds
1/4 Cup prepared Ginger Dressing
4 Tablespoons Olive Oil (for searing)
Combine Sesame Seeds, set aside
Brush tofu with dressing, press Tofu slices onto Sesame seeds, set aside
For Vegetables:
1/2 Cup thick sliced Yellow Squash
1/2 Cup thick sliced Zucchini
1/4 Cup sliced Red Onion
1/2 Cup thick sliced Tomato
1 bunch Asparagus
Marinade for Vegetables:
1/4 Cup Olive Oil
1/8 Cup low sodium Soy Sauce
1 Tablespoon chopped Garlic
Mix marinade. Marinate vegetables 20 minutes.
Grill Vegetables till just tender, set aside for plating
For Wasabi Yogurt:
1 Tablespoon Wasabi Powder
1 Tablespoon water
1/2 Cup Lowfat Plain Yogut
1 Teaspoon Lemon Juice
Combine Wasabi Powder and water to make Wasabi paste.
Combine Wasabi paste with Yogurt and Lemon juice. set aside
For Sweet Soy Glaze:
1/2 Cup low sodium Soy Sauce
1/8 Teaspoon Red Chili Flakes
2 tablespoons Honey
Cornstarch slurry ( equal parts cornstarch and water, mixed)
In saucepan bring first 3 ingedients allmost to boil, lightly thicken with cornstarch slurry. Set aside
To Assemble:
Sear Tofu on high heat for 2 -3 minutes on each side.
Arrange grilled vegetable on plate.
Place slices of Tofu atop vegetables, drizzle with Wasabi Yogurt and Sweet Soy Glaze
Garnish with fresh Cilantro
