Southwestern Grilled Chicken and Bean Salad  
*My Essentials
Ingredients:
1 can red kidney beans
1 can corn kernels (ME)
1 sm carrot, chopped
½ red pepper, chopped
½ cup celery, chopped
2 green onions, chopped
1 tsp dried parsley
6 boneless grilled chicken breasts
Dry rub for chicken:
1T sweet or smoked paprika
1 T brown sugar
1t salt (ME)
¾ t garlic powder
¾ t onion powder
¾ t black pepper (ME)
1/2 t ground red pepper
Dressing:
¼ cup red wine vinegar
1 T oil
1 clove garlic, minced
¼ tsp freshly ground black pepper
1 pinch hot sauce

Rub chicken breasts with oil and dry rub. Place chicken on grill rack coated with cooking spray; grill for 6 minutes on each side or until done.  Let rest then cut into bite sized pieces.
In serving bowl mix vegetables together. In separate bowl whisk together dressing ingredients and pour over salad.
