Spanish style fish
4 fish fillets
Sea Salt and freshly ground pepper
2 Tbs olive oil
1 can plum tomatoes chopped or in season tomatoes (chopped)
1 shallot chopped
2 cloves garlic crushed
1 sprig rosemary
2 bay leaves
1 Tbs chopped fresh parsley or basil
2 Tbs extra virgin olive oil
12 back olives
Serve with, boiled rice, green salad or crusty bread
To prepare the sauce, place the tomatoes, shallot, garlic and herbs into a small sauce pan. Bring to the boil and simmer for 10-15 minutes until the sauce thickens, add the black olives.
To prepare the fish, season with salt and pepper. Heat the oil in a sauté pan, place in the fillets one at a time, cooked for 2-3 minutes each side, until cooked. Remove from the heat and transfer the fillets to dish paper and keep warm.
To serve, place the fillets onto a serving dish, spoon over the sauce and drizzle with olive oil, serve with boiled rice, a green salad or crusty bread. Enjoy!
