Sweet Potato Pie

Sweet Potato Pie
2 Cups Mashed Sweet Potato

2 TBSP Flour
1 Tsp Cinnamon
½ Tsp Allspice
¼ Tsp Clove
¼ Tsp Baking Powder
¼ Tsp Salt

2 Eggs
¾ Cup Sugar
1 Cup Sweetened Condensed Milk
2 TBSP Butter, Melted
¼ Tsp Vanilla Extract
Boil sweet potatoes until a knife slips through easily (about 15 to 30 minutes) and peel when cooled.

Combine Flour, Spices, Baking Powder and Salt in a small bowl mixing well.

 In a medium bowl, beat sweet potatoes adding eggs one at a time, beating well after each addition.
Add sugar and beat well. 
Add spice mixture, condensed milk, butter and vanilla and mix at low speed.

Pour filling into unbaked pie crust and bake at 350o for 40 to 50 minutes, until center is firmly set.
-Using fresh Sweet Potatoes (not canned) for your pie is always best
-Cut sweet potatoes into smaller pieces will break fibers
-Use a hand mixer for blending ingredients but a whisk or wooden spoon can be used as well.
-Most recipes call for evaporated milk but condensed milk adds a creamy, rich texture
-Spices for these pies can vary.  This may include using nutmeg or ginger and not allspice but all recipes use cinnamon
-Using white sugar keeps the bright Sweet Potato color
- Variations on sweet potato pie can include adding pecans, coconut, orange or lemon juice, or meringue topping
