Tortilla Espania
Serves 2
1 cup sourdough bread cubed
2 tbsp olive oil
1 clove minced garlic
½ lb of choizo
1 green onion, chopped
6 eggs
¼ cup whipping cream
Salt and pepper
Red pepper flakes
Grated hard cheese
Cilantro
Instructions:
Lightly toast bread cubes in skillet with olive oil and garlic until crispy.  Set aside to cool.  Brown chorizo in sauté pan.  When halfway browned, add green onion.  Drain when browned and add bread cubes.  Beat eggs, add whipping cream, salt, pepper, and red pepper flakes, then pour over all in skillet.  Turn to low and cover.  Cook 3-5 minutes. Its ready when the eggs look firm on top.
