Welsh Cookies (Welsh Cakes)
8-10 cookies

8oz flour
½ tsp mixed spice
Pinch salt
4oz fine sugar
5 oz butter
3oz sultanas or raisins
1 large egg, beaten
Milk if needed
Butter for cooking
Fine sugar for dusting

Method:
1. Sift the flour into a bowl, add the spice, salt and sugar, stir well together.
2. Rub in the butter until you have fine breadcrumbs. Add the sultanas or raisins, mix in the egg, and bind together, add a little milk if to dry.
3. Roll out the dough on a floured surface. Using a cookie cutter, cut out as many cakes as you can.
4. Lightly grease a griddle with butter, cook the cakes for 20-30 seconds on each side until golden brown, lightly dust with fine sugar, enjoy while warm or allow to cool!
