Pumpkin Pie Smoothie Recipe By Chef Jill Aker-Ray of “What’s for Dinner?” INGREDIENTS: 2 cups light vanilla ice cream or nonfat frozen yogurt 1/2 cup pumpkin pie flling (minus crust) OR canned pumpkin pie mix 2/3 cup low-fat milk or vanilla soy milk or more to taste 3/4 cup crushed ice PREPARATION: Combine all ingredients in a blender; mix until smooth. For a thinner smoothie/shake, add a bit more milk. Pour into glasses and enjoy. Turkey and Mashed Potato Pot Pies By Jill Aker-Ray of “What’s for Dinner?” 2/3 cup leftover green bean casserole ½ cup leftover corn, peas or carrots 1-cup leftover gravy ¼ tsp thyme 1-1/2 to 2 cups leftover turkey-skin removed and cut into bite sized pieces 2 cups leftover mashed potatoes Preheat oven to 400 degrees. Combine green beans, corn, peas or carrots, gravy thyme and season with salt and pepper. Spoon evenly into 4 ovenproof (8 oz) ramekins. Spread tops with potatoes (At this point, the ramekins can be wrapped tightly and stored in freezer for a quick weeknight meal later.) OR Transfer to a baking sheet and bake for 20 minutes. Then remove from oven, heat broiler and broil for 2 minutes or until golden brown on top. Serves 4 Thanksgiving Turkey Panini By Chef Jill Aker-Ray of “What’s for Dinner?” 4 slices quality bread-1/2 inch thick (sourdough or cranberry walnut recommended) 2 TBSP butter or olive oil 4 slices cheese (brie or gouda recommended) 4 TBSP whole cranberry sauce or relish ½ cup leftover stuffing-warmed 6-8 oz leftover turkey sliced thin or shredded Fresh sage (in chiffonade ribbons)-optional Preheat panini press or stovetop grill pan to medium high or panini setting. Meanwhile, Brush one side of each bread slice with butter or olive oil. Place 2 slices bread, oiled side down onto press or grill pan. Top each side with 1 TBSP cranberry sauce/relish. Top each with 1 or 2 slices cheese. Top with stuffing and turkey evenly and top with other slices of bread. Close lid of press (or put weight on top of sandwich on grill pan) and cook until bread is golden brown and crisp on both side. Cut and serve immediately. Makes 2 sandwiches.
