Black bean quesadillas with cilantro pesto

Cilantro Pesto
4 oz cilantro       
5 cloves garlic   
4 oz almonds   
5 oz olive oil   
I Tbl  lemon juice   
½  tsp salt   
Pinch black pepper
Pulse in mini blender
   
Add 5 oz shredded jack cheese
Then pulse for 10 seconds   
   
Black Beans Mexican
1/2 gal filtered water
1/2 qt black beans             
Soak beans in water overnight
Add following ingredients and cook until tender
(about 2.5 to 3 hours)
1 Tbl vegetable stock reduction
1 Tbl salt                   
1 Tbl chili powder           
2 tsp cumin                   
½ cup salsa                   

Spread Cilantro Pesto on ½ of flour tortilla & place on baking pan
Spread ½ cup of whole grain rice over cilantro
Next add ½ cup of Mexican Black Beans
Sprinkle with jack cheese to taste
Layer lean steak over half with just cheese
Bake at 350 for 5 minutes
Remove from oven, fold two sides together, cut and serve with favorite salsa.
Roasted Vegetables or grilled chicken can be substituted for steak.
