Goji Berry Waffles
Remember when you were little and your mom made you waffles on the weekend? Now enjoy them anytime of the week.
Proudly serves 2.
Ingredients:
¾ cup Almond Flour
1Egg (or 2 tablespoons Flaxseeds + 1 tablespoon Water)
1/2 Banana
¼ cup Goji Berries
¼ cup Water
1 teaspoon Vanilla Extract
1 teaspoon Baking Powder
½ teaspoon Baking Soda
1 teaspoon Sea Salt
1 tablespoon Coconut Oil (or Olive Oil Cooking Spray)
   
Directions:
Combine almond flour, egg, banana, water, goji berries, vanilla extract, baking powder, baking soda, and sea salt in a bowl and mix.
Heat waffle iron (or skillet if you do not have a waffle iron) and grease with either cooking spray or coconut oil.
Spoon batter onto waffle iron and cook for about 4 minutes or until golden brown.
Serve hot with a dash of organic maple syrup, coconut oil or butter (optional).
