Spanakopita!
What you need;
1 pound fresh spinach or 3(10-ounce) packages frozen spinach thawed & squeezed
1 pound feta cheese,crumbled
1/2 bunch green onions, finely chopped
5 eggs, lightly beaten
4 tablespoons vegetable oil
dash salt & pepper
1/4 cup chopped fresh parsley
12 sheets phyllo dough
1/4 pound (or more) butter,melted
Wash spinach & drain in a colander. Press or squeeze well to remove excess moisture. This is a most important step.
Combine spinach with feta cheese, onions, eggs, oil,salt pepper & parsley
Place 6,individually buttered, phyllo sheets at bottom & sides of a greased 9x13 inch pan. Spread with spinach mixture. Place remaining individually buttered, 6 phyllo sheets over the mixture.
Make 3 lengthwise cuts through the top layer of phyllo using a sharp knife. Bake at 350 for 1 hour. Remove to a rack and finish cutting into squares.
