Strawberry Cannoli Parfaits

 

Serves 4

Ingredients

Fresh Strawberries, hulled and sliced   1 pound
Amaretto      3 tablespoons
Heavy Cream      1 cup
Confectioner’s Sugar     1/2 cup
Ricotta Cheese      1 cup
Ground Cinnamon      1 teaspoon
Amaretti Cookies, crushed    24 each

 
Method of Preparation

 

1. Gather all ingredients and equipment
2. In a medium bowl, combine strawberries and Amaretto
3. Cover and refrigerate at least 3 hours
4. In a large bowl, whip the cream with confectioner’s sugar until soft peaks form
5. In a medium bowl, stir half of the whipped cream into the ricotta cheese to lighten it
6. Gently fold the remaining whipped cream and cinnamon
7. Place a layer of crushed cookies in each parfait glass
8. Top each with a layer of the strawberries slices and then cannoli cream
9. Repeat layering
10. If desired, top with miniature chocolate chips
