Taco Soup
1 medium onion, chopped
2 garlic cloves, minced
1 small red or yellow pepper, chopped
2 t. oil
4-5 cups beef broth
1 can (15 oz) black beans, rinsed and drained
1 can (14 1/2 oz) diced tomatoes with green chilies , undrained
1 cup from corn
1 cup uncooked macaroni
2 t. chili powder (Food Lion brand)
1 t. ground cumin (Food Lion brand)
Saute onion, peppers and garlic in oil in a large saucepan or Dutch oven until tender. Add broth, beans, tomatoes, corn, pasta, and seasonings. Bring to a boil, stirring frequently. Reduce heat; cover and simmer for 10-12 minutes or until pasta is tender, stirring occasionally.
