Tuna Carnitas
Y: 6 tacos
Ingredients
6-2oz Tuna medallions, marinated (see recipes below)
2 Tomatoes-small dice
1 Cup Tomatillo Avocado Salsa (see recipe below)
¼ Cup Cilantro, chopped
1 ½ Cup Shredded cabbage & romaine
6ea Wheat Tortillas
In a bowl, dredge marinated tuna medallions with spice mix, lightly shake off
In a sauté pan, sear tuna until medium rare
Remove from pan and build tacos starting with wheat tortilla, followed by; shredded cabbage & romaine, tuna, tomatillo avocado salsa, chopped tomato and cilantro
 

Tuna Marinade
½ Cup White onion, medium chop
3 Bay leaf
2Tbl Thyme, chopped fine
2 tsp. Mexican dried oregano
½ Cup Orange juice
½ Cup Milk
6 cloves Garlic
2 tsp Salt
¼ Cup Water
¼ Cup Sugar
In a blender, puree first 8 ingredients, strain and return to blender
Combine sugar and water in a pot. Bring to a boil and simmer over med-high heat until golden caramel
Slowly add caramel to the blender and blend until smooth
Marinate tuna for 30 minutes in refrigerator
 

Tuna Spice
¼ Cup Chili powder
¼ Cup Morita powder
¼ Cup Guajillo powder
¼ Cup Salt
¼ Cup Flour
In a large bowl, combine with a whisk until smooth
Tomatillo Avocado Salsa
3 Roasted jalapenos
8 Roasted green tomatoes
1 Avocado, peeled, pitted, seeded and chopped
1.5 Salt
1 cup Water
1 ea Juice from 1 lime
Roast jalapenos, and tomatillos on grill pan until caramelized and softened
Cool down, remove stems. Blend all ingredients in a blender until smooth, set aside
